Every month, an innovative technique is applied to this gold standard of lunch time, sometimes harkening to other comforting dishes such as mashed potatoes, brie and jam, artichoke dip.
The idea began with having the perfect base of daily fresh baked bread, and evolved into a quick, simple lunch item that would allow the staff to get creative. The grilled cheeses are designed to complement the Soup of the Day, completing a wholesome and enjoyable lunch item for Downcity workers.
Some staff favorites include bacon jam + cheddar on beer bread, and the beet + herbed ricotta + cheddar.
When deciding on new flavor combinations, they look at what is in season and available that week. The staff also brainstorm with each other and collaborate what flavors they would like to eat and what they think guests will enjoy.
